Salad spread with fresh salmon, cottage cheese and lime
Spread your favourite bread with this yummy mixture of salmon and cottage cheese!
- 150 g fresh, raw salmon fillet
- 1 small Thai pepper or 1 teaspoon chili flakes
- 100 g cottage cheese
- 1 tablespoon olive oil
- 1 lime
- Salt and pepper
- 1 tablespoon parsley or coriander leaves
Bring a pan of salted water to a boil. Boil the salmon fillet together with the Thai pepper or the chili flakes until the fish is cooked through. Remove the fish from the water and allow it to drain and cool off. Using a fork, smash the cooked fillet until it forms a spreadable paste still containing some larger pieces of fish.
Mix the smashed salmon with the cottage cheese, olive oil and the juice of half a lime. Season with salt and pepper.
Peel the other half of the lime and cut into small triangular pieces. Rinse the parsley or coriander leaves and chop finely. Mix the herbs and the pieces of lime into the salmon.2
