Goat’s cheese, avocado and sun-dried tomato tartine
“Goat’s cheese, avocado and sun-dried tomato tartine. What a treat! And best of all... it's home-made. Mmm! I am a big fan of Niamh’s bread mixes."
– Amylia
Sandwich with fresh wild garlic pesto, tomatoes and pistachio oil
"Home-made bread (on the green egg) and fresh wild garlic pesto (I picked the garlic myself), tomatoes and pistachio oil. Very tasty!"
– Laura
Sandwich with avocado, courgette dip, egg and fresh herbs
"This was my first homemade bread. I followed all the tips from my colleague Caroline and used Niamh’s 'Crunchy Gold'. My bread came out perfect. We had a blissful lunch, sitting on our patio in the first spring sunshine."
– Evelien
Sandwich with a fresh apple and celeriac salad
“Naturally, delicious bread deserves a delicious topping. So I made one - a celeriac and apple salad. It was delicious in combination with the dark bread. Lots of flavour and healthy into the bargain!"
– Laurence
Sandwich with homemade vegan egg salad
"This vegan egg salad is heavenly!

Here's how you make it: Mix 1/2 tsp turmeric, 2 tbsp nutritional yeast, 1 tbsp lemon juice, 2 tsp Dijon mustard, 1 tin of chickpeas, 1 tbsp olive oil, 75 ml soy cream, black pepper and coarse sea salt. Press 200 g tofu between a tea towel, chop coarsely and add to the mixture together with 1 cup of chives.

Mix well, and serve on a sandwich with finely-chopped apple."
